My Texas Girl

Abbie had a special event today at school, and I decided I would go a little early and join her for lunch.

We've been planning it for weeks, and Abbie told me several times what it was I should wear and how important it was that I wear my hair "long" because a ponytail is "not my best look." I did my best to comply with her requests.

She originally wanted to "buy" lunch for me at school. I checked out the menu this morning, and had to break it to her that Mommy was NOT going to be eating fish sticks or cheese pizza cut into squares. So, I told her that I would be bringing lunch for the both of us.

There were other parents at the lunch who apparently couldn't bring themselves to dine on the fish sticks and ketchup combo either. So, they were toting in the standard special lunch treats. There were Sonic corn dogs proudly displaying their grease content through the paper bags, McDonald's happy meals, and chicken nuggets for days. But, what did MY girl get...

That's right folks! Abbie got herself a big ol' BBQ plate complete with BBQ sauce and lemonade from Smokey Mo's. She kept telling her friends, "Do you even know what this is!! This is fried okra and tater salad!!!"

I can't wait to get this kid on the baby back ribs and sweet tea. Seriously, she has to be the coolest five-year-old out there!

Double Dave's Goes Bankrupt

We decided to hit Double Dave's tonight because it's buffet night! Abbie & I always go with the goal of getting our money's worth... which should be everyone's goal in an all-you-can-eat scenario. It's an obsession of ours.

I didn't do my best work, but I did have a respectable 6 pieces of assorted savory and sweet pizzas. Abbie came in at an admirable 7 pieces... not a personal best, but still pretty good. While eating the 6th piece, she looked up at her Dad & said,

Abbie: "I'm so full that I'm sick."

James: "Abigail, when you are full, you should stop eating." (Crazy talk, I know.)

Abbie: "But, I really like eating." (That's my girl!)

So, she topped it all off with one last piece of pepperoni just to show him how it's done. James doesn't share our passion for overeating. He turned in a sad 2 piece stat and a side salad. It's embarrassing.

Girl Seeks Perfect Enchilada

Please help!

This is important folks. If you know me at all, you know this is very serious business...

Do you have a really good recipe for enchiladas? By all means, please share here!

I don't discriminate when it comes to enchiladas... I like ALL kinds.

Chicken
Beef
Cheese
Pork
Shrimp

I am so excited to try your recipe with a giant margarita! My family thanks you in advanced for not leaving me to my own creation.

Mmmm...Bread Is Good!

Every week my mother-in-law, T, keeps Lila for me so that Abbie and I can go to our weekly Bible study. Not only is she a great Granna, she was also my Cooking Coach this week.

Yesterday, she taught me how to make her homemade dinner rolls!

That's right folks...I made this delicious basket of HOMEMADE DINNER ROLLS!

Coach stuck with me the whole way, teaching me how to get the dough to just the right consistency. She even fielded a panicked phone call from me during what we in the bread making business call the "rising phase."

I'm proud to say that unlike my coaches in high school, she did not have to hit me once with the clipboard or blow her whistle at me. She also did not ask me to leave the gym.

Thanks Coach T!!!
